The best chocolate is the one you like best. Do you prefer dark chocolate, milk chocolate, or white chocolate?



White Chocolate contains 0% cacao. Many do not consider this a true chocolate. However, companies can use the name chocolate if it contains at least 20% cocoa butter.



Milk Chocolate contains 30 to 45% cacao. Milk chocolates are sweeter with more mild flavors than you will find in dark chocolates. Because these chocolates have less cacao, they are lacking the full range of flavors you can find in dark chocolates.

Dark Chocolate will contain 50% or more cacao. The higher the percentages of cacao the lower the amount of sugar you will find in the chocolates. Semisweet Chocolate contains 50-65% cacao. Bittersweet chocolate has 70% or higher cacao. These will be your strongest flavored chocolates. Because they contain a high amount of flavonoids, dark chocolates are good for your heart. Eaten daily, they can lower both your blood pressure and your bad cholesterol.

There are many flavors found in chocolate. Flavors are determined by the cacao beans themselves, by the type of chocolate, and by the different processes in making the chocolate.

Typical flavors that you might taste in include citrus, fruity, floral, chocolaty, nutty, earthy, burnt, bitter, astringent, green, smokey, medicinal, musty, rubbery, sour, straw, tobacco, vanilla, winey, and woody. What determines the best flavor is up to each person's individual likes and dislikes.
