Roy's Chocolate Souffle Recipe

Chocolate Souffle

Roy does have the best Chocolate Souffle Recipe. When my husband and I ate at Roy Yamaguchi's restaurant in Maui more than seventeen years ago, we had this souffle for the first time.

As huge chocolate lovers, we were in heaven. I can't imagine a more delicious dessert than this!

Ingredients:
6 tablespoons unsalted butter
4 ounces semisweet chocolate
1/4 cup sugar
1 1/4 tablespoon cornstarch
2 eggs
2 egg yolks

Instructions:
1. Melt butter and chocolate in a small saucepan over low heat.
2. Combine sugar and cornstarch. Whisk eggs and egg yolks.
3. Add butter and chocolate to the sugar. Stir in the eggs. Mix well. Chill overnight.
4. Scoop into four 2 3/4 inch steel rings lined with greased parchment paper.
5. Bake 15-20 minutes. Be careful not to overcook.
6. Remove from rings and serve immediately. They taste great with vanilla bean ice cream and raspberry sauce. Garnish with fresh raspberries if desired.

Note: You can purchase the rings online from JB Prince. The rings are Item #M225.
