4. Taste the chocolate. Let it slowly melt in your mouth. Is the chocolate smooth or grainy? Is it velvety or greasy? What flavors do you detect? Do the flavors change as the chocolate melts more? What do you think of the flavors that you are left with when the chocolate is gone? This is called the finish and should be enjoyable.
