Flourless Chocolate Cake Recipe



This flourless chocolate cake recipe is delicious. It's rich...but not too rich. This delightful cake will quickly become a favorite!


Ingredients:
9 ounces bittersweet chocolate
1/2 cup unsalted butter, softened
2 eggs
4 eggs, separated
1/3 cup sugar
1 additional tablespoon sugar
1 pint whipping cream
1 teaspoon vanilla
1/4 cup powdered sugar




Instructions:
1. Preheat the oven to 350 degrees.
2. Line the bottom and sides of a 9 inch springfoam pan with nonstick baking spray.
3. Melt the chocolate and butter in the top of a double boiler.
4. Beat the 2 egg, 4 egg yolks, and 1/3 cup of sugar, Add the melted chocolate mixture.
5. In a small bowl, beat 4 egg whites until foamy. Gradually add in 1 tablespoon of sugar. Beat until the whites form soft peaks.
6. Gently fold the egg whites into the chocolate mixture.
7. Pour into pan and bake for 35-40 minutes.
8. Cool the cake on a wire rack. The cake will fall as it cools.
9. Remove the cake from the pan. It will be sunken on top.
10. Beat the whipping cream in a medium bowl until it forms soft peaks. Add vanilla and powdered sugar. Continue beating until stiff peaks form. Spread cream on top of cake. Top with grated chocolate, cocoa powder, or chocolate curls, if desired.
