German Chocolate Cake Recipe



This is the German Chocolate Cake Recipe that my mom used to bake. It's a moist chocolate cake with a delicious gooey pecan frosting spread on top and between its two layers of cake.







Ingredients for cake:
4 ounce package Baker's German Sweet Chocolate
1/2 cup water
4 eggs, separated
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup softened butter
2 cups sugar
1 teaspoon vanilla
1 cup buttermilk

Instructions for cake:
1. Spray the bottoms of two 9-inch cake pans with Pam. Line with wax paper.
2. Melt chocolate and water in a large bowl in the microwave. Stir well.
3. Beat eggs whites in a small bowl until stiff peaks form.
4. Sift together flour, baking soda, and salt.
5. Beat butter and sugar in a large bowl until fluffy. Add egg yolks to this mixture. Beat well. Add melted chocolate and the vanilla. Add buttermilk and flour mixture a little at a time. Blend well.
6. Stir in the egg whites gently. Pour into pans.
7. Bake for approximately 30 minutes in a 350 degree pan. Cool. Spread pecan frosting between the two layers and on top.8. If desired, top with whole pecan and/or shaved chocolate.

Ingredients for Pecan Frosting
3/4 cup Carnations evaporated milk
1/2 cup light brown sugar
1/2 cup sugar
1/2 cup butter
1 teaspoon vanilla
3 egg yolks, slightly beaten with a fork
1 1/3 cups coconut
1 cup chopped pecans

Instructions for Pecan Frosting
1. Bring the following ingredients to a boil in a saucepan over medium heat: evaporated milk, brown sugar, sugar, butter, and vanilla. Stir constantly.
2. Stir a tablespoon of this hot mixture into the egg yolks. Add the egg yolks to the pan and return to a boil. Continue stirring constantly.
3. Remove from the burner. Stir in pecans and coconut. Cool.
